  • Parmesan, or "parm," is the name commonly used in the U.S. to describe the very hard cheese known as Grana in Italy. Parmesan is a naturally firm cheese with sweet, fruity flavor notes.
  • Romano is another hard Italian cheese and it is sometimes called Incanestrato. In Italy, it's often made from ewe's milk or goat's milk. At Kraft Food Ingredients, we make it exclusively from cow's milk. Romano is a naturally firm cheese with a sharp, biting flavor and aroma.
